Since January, I’ve been wanting to make a change to how we start our day. I do like it when we have time for good old fashioned bacon and eggs, but that doesn’t always happen. We had been relying on cereals for the busier days. I just wasn’t excited about that option, but it was convenient.
So anyway, January 2015, has seen us avoiding the cereal aisle. I am happy to report that I am not getting pushback from my family! THEY LOVE IT! I am making my own granola and it is a much healthier option. One other wonderful thing to note: it’s quick and easy. My nine year old can whip up a batch with no trouble.
Laura’s Healthy & Easy Granola Recipe
10 cups Old Fashioned Oats
1 cup melted Coconut Oil
1 cup Honey
1 Tablespoon Cinnamon
1 Tablespoon Vanilla
1/2 cup Chia seeds
1/2 cup Hemp seeds
1/2 cup Flax seeds
3/4 cup Walnuts
3/4 cup Sunflower seeds
Directions:
Preheat oven to 325 °F. Stir everything together in a big bowl. Spread on two large cookie sheets. Bake for 20 minutes, stirring half way through.
For fun you can use different seeds, or nuts! You can add coconut, or craisins, or raisins, or bran. Try your own variations. (At night, I’ve thrown in a few chocolate chips to make it like a dessert…shame on me.)
Now you have a healthy and fast breakfast to start your day!
Thank you for sharing your recipe. Our family has grown tired of cereal, perhaps they will enjoy this.
I hope they do, Lacey.
